We have a little tradition in our family, started by my mom. We make a simple ice cream cake for Jesus and sing “Happy Birthday” to him on Christmas Eve. Here’s how we make ours!
I buy my frozen whipped topping and mint chocolate chip ice cream at Trader Joe’s. I love Trader Joe’s. Trader Joe’s is my favorite. But you can use whatever brand you like.
Allow the whipped topping and ice cream to get nice and soft. Put about half of the container of whipped topping and about half the container of ice cream in a bowl and mix it together by hand. I usually use a spatula.
Fill the Oreo pie crust to the brim with the mixture.
Take some peppermints (candy canes are fine too) and unwrap them. Place them in a ziplock bag. Using a rolling pin, meat mallet, or the bottom of a frying pan, break the peppermint into pieces. You don’t want powder. Little chunks are great for some crunch.
Sprinkle the peppermint pieces on the ice cream cake/pie and you are done! Cover it loosely with plastic wrap and place it in the freezer.
Like any ice cream cake, you’ll need to allow it to defrost a little bit before serving, otherwise it’ll be too difficult to cut.
It really is a nice change from the norm. The cool mint ice cream and the crunchy peppermints are a welcome change after a big Christmas dinner, pies, and chocolate desserts.
